Wood Sorrel Identification & Recipe

Known as “the perfect walker’s plant,” Wood Sorrel is a forager’s delight and a favourite among nature enthusiasts. Its refreshing citrusy flavour, reminiscent of apple skins, makes it a perfect snack for long woodland walks. Traditionally used to quench thirst, Wood Sorrel is not just tasty but also a fun plant to identify and gather. While it contains oxalic acid, which is toxic in very large amounts, the quantities present in Wood Sorrel are so small that it’s safe to eat in moderation.

What do you need?

  • A basket or container for collecting. 

  • A small knife or scissors (optional). 

  • Woodland access with healthy plant growth.

How to do it.

Harvest and ID Wood Sorrel


Look for the trefoil, heart-shaped leaves in shady woodland. Check for the distinctive citrusy taste. Wash thoroughly. 


Egg and Wood Sorrel Sandwich SERVES: 2 


INGREDIENTS


  • 3 eggs, at room temperature 

  • 2 tablespoons mayonnaise 

  • 2 spring onions, thinly sliced 

  • 4 large slices of soft white bread (like a bloomer) 

  • 2 gherkins, thinly sliced Handful of freshly picked Wood Sorrel, washed Salt and pepper 


METHOD


1. Bring a small pan of water to the boil. Gently lower the eggs and set a timer for 8 minutes. 

2. Drain and cool eggs under cold water. Peel and roughly chop them. 

3. In a bowl, mix eggs with mayonnaise, spring onions, salt, and pepper. 

4. Spread the egg mixture on two slices of bread, top with gherkins and Wood Sorrel. 

5. Add remaining slices of bread, cut in half, and enjoy.
