This is the sort of supper that requires very little effort but makes the kitchen smell excellent. Sausages, apples, potatoes, mustard and cider all roasted together until sticky and golden.

What do you need?

Serves 4

Ingredients

  • 8 good-quality pork sausages

  • 750g baby potatoes, halved

  • 2 eating apples, cored and cut into wedges

  • 2 carrots, cut into chunky pieces

  • 1 tbsp olive oil

  • 1 tbsp wholegrain mustard

  • 200ml dry cider

  • 1 tsp dried thyme, or a few fresh sprigs

  • Salt and black pepper

How to do it.

Method

  1. Heat the oven to 200°C / 180°C fan.

  2. Put the potatoes and carrots into a large roasting tin. Toss with the olive oil, thyme, salt and pepper.

  3. Roast for 20 minutes.

  4. Add the sausages and apple wedges and roast for another 20 minutes, turning everything once.

  5. Mix the mustard into the cider, then pour it into the roasting tin.

  6. Return to the oven for another 15–20 minutes, until the sausages are browned, the potatoes are cooked through and the cider has reduced into a glossy sauce.

  7. Spoon some of the mustardy cider juices from the bottom of the tin over everything before serving.

Wildish tip: Use an apple that holds its shape reasonably well. You want golden roasted wedges rather than apple sauce.
