Griddled Halloumi with Samphire & Brown Butter

A simple coastal supper to cook over the fire.

What do you need?

Ingredients

Serves: 2

  • 225g block of halloumi, sliced into 1cm thick pieces

  • 100g fresh samphire

  • 40g butter

  • Zest and juice of ½ lemon

  • A small handful of chopped parsley

  • Freshly cracked black pepper

  • Olive oil

How to do it.

Method
  1. Heat a cast-iron pan or griddle over the fire until hot. Brush the halloumi lightly with olive oil.

  2. Cook the halloumi for 2–3 minutes on each side until deeply golden with crisp edges.

  3. Add the butter to the pan. Once it begins to foam and turn lightly golden, stir in the samphire and cook for 1–2 minutes until just tender.

  4. Remove from the heat and add the lemon zest, a squeeze of lemon juice and the chopped parsley.

  5. Spoon the buttery samphire over the halloumi, finish with plenty of black pepper and serve immediately.

Best enjoyed with: Crusty bread to mop up the buttery pan juices, or boiled new potatoes if you're a little hungrier.
