Charred Butter Beans with Samphire & Lemon

A simple vegan supper to cook over the fire.
What do you need?
Serves: 2
Ingredients
1 x 400g tin butter beans, drained
100g fresh samphire
2 tbsp olive oil
1 clove garlic, finely sliced (optional)
Zest and juice of ½ lemon
A small handful of chopped parsley
Freshly cracked black pepper
How to do it.
Method
Heat a cast-iron pan over the fire and add the olive oil.
If using, gently fry the garlic for 30 seconds until fragrant.
Add the butter beans and cook for 5–6 minutes, stirring occasionally, until they're lightly crisp and golden in places.
Stir in the samphire and cook for another 1–2 minutes until just tender.
Remove from the heat and add the lemon zest, a squeeze of lemon juice and the chopped parsley.
Finish with plenty of black pepper and serve straight from the pan.
Best enjoyed with: Thick slices of toasted sourdough for mopping up the lemony juices.
